    My guy at Toyota said I couldn’t use 17 because brakes would not work.

    certain 17s work some dont, verify with manufacturer.

    the only ones I’ve seen are from popular off-road community brands such as icon/method etc

    There is certain makes of 17s that fit with your brakes. There's another thread with the list. Of course the 17s will cost you $$$.

    only 5% difference really if you compare 35 on 17"s vs 18"s.

    17s definitely fit.
    Just have to be careful where you put the wheel weights.
    They have to go the edges, otherwise they will rub the caliper

    No, that's too many wheels - Tundra can only take five max if you're counting the spare. That is unless you can fit 12 in the bed, then 17 is would work.
