I recently learned that I either can't make good French toast or don't like it as much as I thought I did.

Same batter, yes. Different dish. You gonna try and tell be that a scrambled egg and a fried egg are "the same thing" too? By that logic a fried egg sandwich and french toast are the same thing because they are both just bread and eggs.

    No.

Pancakes and waffles are not the same thing, and Pancakes are better that waffles.

To be fair I'm not a sweets for breakfast kinda guy unless it's a fresh cinnamon roll or donut. And that ain't breakfast all by itself. I still need some real food to keep me going. Waffles, pancakes, french toast all play second fiddle to a savory breakfast option.

I throughly disagree with the opinion piece about how filling pancakes are. If I eat them I'm hungry for energy like 15 minutes later and they haven't even begun to digest. No way to start a day on a belly full of flour and sugar if you need sustained energy.

as someone that makes both pancakes and waffles, they're different. MOSTLY same ingredients, but different.

    i can't believe i'm saying this, but i agree with @GODZILLA
it's along the same lines that eggs and chickens are the same...since eggs turn into chickens.:boink:

    Nope
Even if you use a pancake recipe base (I prefer to use a yeast dough, or sourdough), how they cook and the end result is way better.
One is a flaccid disk shaped sponge.
The other has a crispy outer surface with the right amount of texture and “chew” inside…and traps the syrup and melted butter in the little pockets like little puddles of butterscotch.

I'll take my lumps on this one. I was trying to test the theory of @GODZILLA dying on the hill for his pancakes.

I do know they are different and yes agree that of the 2, waffles are the best because of the texture.

This is the easiest and one of the tastiest French Toast recipes I've found. The key is the bread and you can make a double batch, freeze them and pop them in the toaster for a quick reheat.

    FRENCH TOAST
    3 large eggs
    1 tablespoon vanilla extract
    2 teaspoons packed brown sugar
    ½ teaspoon ground cinnamon
    ¼ teaspoon table salt
    2 tablespoons unsalted butter, melted
    1 cup heavy cream
8 slices hearty white sandwich bread

Adjust 1 oven rack to lowest position and second rack 5 to 6 inches from broiler element. Heat oven to 425 degrees. Generously spray bottom and sides of 18 by 13-inch rimmed baking sheet with vegetable oil spray. Whisk eggs, vanilla, sugar, cinnamon, and salt in large bowl until sugar is dissolved and no streaks of egg remain. Whisking constantly, drizzle in melted butter. Whisk in milk.

Pour egg mixture into prepared sheet. Arrange bread in single layer in egg mixture, leaving small gaps between slices. Working quickly, use your fingers to flip slices in same order you placed them in sheet. Let sit until slices absorb remaining custard, about 1 minute. Bake on lower rack until bottoms of slices are golden brown, 10 to 15 minutes. Transfer sheet to upper rack and heat broiler. (Leave sheet in oven while broiler heats.) Broil until tops of slices are golden brown, watching carefully and rotating sheet if necessary to prevent burning, 1 to 4 minutes.

Using thin metal spatula, carefully flip each slice. Serve.

For sure. Once you hit 50 your diet has to accommodate the changes. If I do carb load for breakfast it's hash. Protein, potatoes, scallions, carrots, mushrooms. Top that with 2 fired eggs and some hot sauce and I'm good. If I don't have the time for all that prep, I'm eating oatmeal with fresh fruit. I can ride for 4/5 hours on this belly. Pancakes or waffles, I'm hungry by the time I park.

I also meal plan/cook with how many dishes it makes. I tend to favor less dirty things also the better.
