I'm looking for a good space to take a key on/acc power under the hood in a 2021 Tundra, I've seen most have used the IGN 10amp power,

checking online it seems (from here https://fuseandrelay.com/toyota/tundra-2g.html) that IGN power is going to:

SRS airbag system, multiport fuel injection system / sequential multiport fuel injection system, immobilizer, cruise control, gateway unit

Now those all sound like things I wouldn't wanna touch the circuit of even for a tap, Those that have tapped signal 12v power from their have you had any issues? it seems the best place to get the power from if I don't find a blank spot that happens to already be wired.

I have been using it as a trigger for a relay for years now. No issues, its only being used to trigger the relay and then the relay is powered from the battery. The original circuit and relay trigger are both fused. I wouldn't suggest running power off it though.

Good news, but I noticed your tap is reversed from most, did you test which side of the fuse is the incoming power? yours is the first I've seen with the tap over the empty, and not the other way with it over the other fuses.

Yes, tested it to make sure that it was actually protecting the circuit, common mistake people make putting it the other way. Always a good idea to test with a multimeter.

Trust but verify, thanks for saving me some guess testing, I'll check with my truck to confirm its the same way, but that's great news its facing that way, should make routing the cable easier as I plan to poke the cable through an open gap at the bottom of the panel where the factory cables go out. My plan is the same just a trigger to turn on a switch panel.

Absolutely always a good idea to check. Typically when you have a double row of fuses the 12v side of the fuse is the side closest the the other row of fuses since the 12v power runs down the middle to power both sides.

Good video for anyone wondering what we are talking about here.
