The pickle juice has my interest……..
I recently saw something about brining string cheese in pickle juice?

the ones at work seemed to have no seasoning or color to the filling, very bland. We used to do this Easter meal at my uncles and some aunt would always make killer DE, I’d clear off an entire tier of the display!

You would GET DOWN on my BIL cooking; specifically his pies. He always does a weird twist, but honestly I just wish he would make a normal pie of the same caliber

You can put that shit on anything!! But I think it was in place of the traditional white vinegar that I usually see. I think it would have been great if I got the proportions right. I’ll give it another go around Christmas.

We also had a great surprise. My nephew-in-law deployed earlier this year. They were trying to have a baby but stopped when they found out he was deploying. Found out the day he moved aboard it worked. The ship had one more port call before coming home, but he got airlifted off early. They didn't tell anyone, he just showed up today. Very pleasant turn of events.

I’m a huge pickle fan as well. And I think if I had done relish it’d be okay, it was just the brine flavor being a little too forward. Those that your wife made look bomb though.

Martin House in Fort Worth has a whole spread of pickle beers. They’re actually really good, although a little weird…

I actually enjoyed the OG one. I’d be down for the Bloody Mary version too, but I agree that the fruit ones get a little… meh. I had the pineapple one when I was in town last month. Wasn’t horrible, but I wouldn’t order it again.

I tried it make a bourbon chocolate chip pie many decades ago. It was an epic fail.

Hope y'all got some good quality family time in yesterday.

Edit: yes on deviled eggs. And yes on pickles.

Mine started as a chocolate chip pecan pie about 20 years ago, then I started adding Jack Daniel to it. Switched from Jack Daniels to Bulleit Bourbon and semi sweet chips to milk chocolate ones. It’s morphed through the years but I think it’s just about perfect now.

    @OldGuy03

Joel's Chocolate Chip Bourbon Pecan Pie

    1 (9 inch) pie shell
    1 cup white sugar
    1 cup light corn syrup
    1/2 cup butter
    4 eggs, beaten
    1/4 cup Bullet bourbon
    1 teaspoon vanilla extract
    1/4 teaspoon salt
    6oz milk chocolate chips
    170g pecans

Preheat oven to 325 degrees F.

Place chocolate chips and pecans in the bottom of the pie shell.

In a small saucepan combine sugar, corn syrup, and butter or margarine. Cook over medium heat, stirring constantly, until butter or margarine melts and sugar dissolves. Cool slightly.

In a large bowl combine eggs, bourbon, vanilla, and salt. Mix well. Slowly pour sugar mixture into egg mixture, whisking constantly. Pour mixture over pecans in the pie shell.

Bake in preheated oven for 50 to 55 minutes, or until set and golden. May be served warm or chilled.

    NOTES:
I use Guittard Milk Chocolate Chips - I don't think there are any better than those.

After I pour the mixture over the pecans, I add a few more pecans in any areas where it looks like there aren't any.

Awesome! Thanks bro. I was just about to ask for the recipe but then I scrolled down. I'll have to do some research baking it at altitude. That's what bombed my first iteration, I didn't make any altitude adjustments.

Maybe you need to set up a kitchen at the bottom of the mountain, bake the pie, and then climb back up the mountain with the pie. Seems easy.
