I found the coolant level a little low - should I use Toyota coolant only or an aftermarket coolant?

Just add H20 Water and get the reservoir up to level @zeenith
There is enough coolant that a cup or 2 wont dilute it too much.

Keep an eye on the level

Toyota coolants are already diluted. It may not hurt it but I wouldn’t add more water. Use the right stuff on a brand new truck. For fuck sake.

Definitely bugged me that Toyota didn't top off my coolant when I took my truck in for a ToyotaCare oil change and tire rotation. So much for that 150 point inspection...

When we got our truck in 2019 I noticed the coolant was a little low the next day after it had been sitting over night.
The handbook says between upper & lower marks on expansion tank, for correct level, which in fairness it was.
My OCD got the better of me and I topped it off to the upper level mark with the Toyota coolant.
OCD is a bitch but I live with it. My wife thinks I'm nuts and she is probably not far wrong.
I do not use Toyota Care

You think that's bad. You should see me try to get the tire pressures exact using a tire gauge and the display. Either the truck or my gauge is off by some. :)

I’ll bite….what is your definition of “little low” and when did you check it, after it sat for awhile or before.

Which ever PINK coolant is closest/easiest to get to.

I've used all the aftermarket PINK brands for top offs and coolant changes on all the Toyota's that come thru my garage. Works just fine.
