    so true. But we have a lot of commercial fleets here that have flash freezers on board. They butcher and flash freeze the catch almost immediately. With the shrimp and scallops you can't really tell a difference. I'll buy shrimp off the dock 10 pounds at a time. They're frozen individually so you can take out as many as you want without having to thaw a big lump.
